Well, tonight was going to be "epic" as Kynzi would say. But when Garett started the dinner process he didn't find any tomato sauce to make our homemade sauce for our meatballs. So thankfully our sweet neighbors had some tomato sauce!! Garetts making homemade marinara sauce for our cheesy stuffed meatballs.
Ingredients:
Meatballs
- 1lb of ground beef
- 1lb of ground pork
- Mozzarella ( we used sting cheese, you can use the block and cut up in squares)
- parsley
- 2 eggs
- Italian seasoning
- White onion
- Salt & Pepper
Sauce
- Olive Oil
- 1/4- 1/2 cup chopped onion
- 2 cloves of garlic
- Garlic powder
- Italian seasoning
- 1 can of tomato sauce
- 1 can of crushed tomatoes
- Salt & Pepper
Directions:
1. Chop up onion, garlic and parsley.
2. Mix ground pork and ground beef together in a bowl, add in salt, pepper, egg, Italian seasoning in a bowl.
3. Make ping pong/golf ball size pieces of meat and place the mozzarella in the middle and form a meatball. Make sure cheese is covered and enclosed fully. (we made about 10-12 meatballs)
4. Make sure your cast-iron skillet is ready and oiled, and place the meatballs in the skillet. Let these cook, and flip around constantly once browned on each side.
5. While the meatballs are doing their thing, lets start the sauce. Add in the a little olive oil, garlic and onion. Let sauté for a few mins.
6. Add in crushed tomatoes, tomato sauce in the sauce pan. Throw in some parsley, Italian seasoning, salt and pepper. Let warm and mix together.
7. Once meatballs are fully cooked through, serve meatballs in bowl or plate with your marinara sauce. Top with parsley and crushed red pepper! :)
8. Enjoy with a side salad!
