Pablano Stuffed Fajitas

So we are getting back to our menus and our keto life style. This “rona” has overstayed it’s welcome and it’s time for life to get back to “normal.” :) 

Tonight we are cooking fajita stuffed Pablanos. I am calling it Pablano Stuffed Fajitas. And guess what!!?? 

It’s Keto Friendly! 



Ingredients: 

- 4 Pablano peppers

- beef fajita meat (we buy H-E-Bs fajita meat) 

- cheese ( we shred blocks of cheese- tonight we are using Queso) 

- avocados (to top with)

- hot sauce (if you know me salsa, I call hot sauce) 


Directions: 

1. Season fajita meat if you don’t get already seasoned meat. 

2. Wash and cut Pablano peppers - cut long ways. 

3. Shred cheese, cut avocado in chunks for topping. 

4. Roast pablano peppers on the grill - (we did about 10 mins) 

5. Cook fajita meat on grill- cut up when done (we did chunks) 

6. Place pablano pepper on plate, top with fajita meat, cheese, avocado and hot sauce. 

7. Enjoy!
