It's Taco Tuesday, so you know what that means!!! TACO NIGHT! :) Hey but guess what? We are having soft tacos, on carb balance tortillas! Garett and I are Cutting down the carbs and working out again!
So with these tacos, I cooked the meat in the Ninja on "Sear" mode. :) But you can always cook them in a pan on the stove.
Ingredients:
- Ground Beef (1lb)
- Colby Jack block of Cheese (grated)
- 1 Tomato
- 1 Jalapeno
- 1 Onion (half for meat, half for pico)
- 2 garlic cloves
- Half a lime
- Salt & Pepper
- Taco Seasoning
- Shredded Lettuce
- Sour Cream
- Taco Bell Hot Sauce
- Low carb tortillas (we use the HEB brand or Mission)
Directions:
1. In your ninja, turn it on sear/sauté mode. I set ours on high.
2. Add in a little oil, and place half of onion and garlic. Let the onion and garlic cook down for about 5 mins.
3. Add in your ground beef, use chopper to ground up, add taco seasoning, salt & pepper, cook until done.
4. While the meat is cooking its time to make pico. Cut up tomato, jalapeño, and other half of onion. Place in a bowl together, add in half a lime and season with salt and pepper, mix and chill.
5. In another bowl grate your cheese.
6. Once meat is cooked completely, heat up your tortillas. We have a gas stove so I just flip them on the stove. But use whatever tortilla method you have to heat the tortillas up.
7. Start filling up your tortillas, I always put cheese on the bottom so it gets melty!! Add your taco meat, and all your toppings!
8. Enjoy!
