Creamy Chicken No Tortilla Soup (Crockpot)

Happy Monday y'all, it is freezing (literally) here. It was the perfect lazy day for Kynzi and I! Garett unfortunately had to work, but hopefully he won't have to tomorrow because SCHOOL is CLOSED and the roads are suppose to be really bad. We are expecting some snow tonight and tomorrow, haha I can't even believe it. This in OCTOBER?? Anyways, here is what we had tonight for dinner. It cooked in the crockpot all day long and was so good. I named it no tortilla because it is carb friendly! :) 



Ingredients:

- 5 Chicken breast (we used a 5 pack of boneless chicken semi-thin breast)

- Taco seasoning

- Salt & Pepper

- Garlic Powder

- 2 Cups chicken broth

- 1 White onion

- 3 Jalapeños (save one for topping)

- 1 Can of rotel

- 1 Block of cream cheese (Melted)

- 1 Cup of Heavy Whipping Cream

- Avocado (topping)

- Cilantro (topping)

- Colby Jack/Mexican Cheese (topping- whatever you have on hand will work)

- Sour Cream (topping)


Directions: 

1. Time to get the crockpot out, turn on low, pour in chicken broth. Season your chicken breast with salt, pepper, garlic powder and taco seasoning on both sides. Place in the crockpot.

2. Chop up your onion & jalapeños (keep one jalapeño for topping) open your can of rotel and pour in. 

3. I let this all cook for about 2-3 hours together. I then heated up the heavy whipping cream for a minute or Two in the microwave and poured it in. Stirred it around and placed the top back on.

4. 3-4 Hours in, For the block of cream cheese, place it in a microwave safe bowl. Heat up for about 2 minutes. Then place spoonfuls into the crockpot, I used a fork to whisk it around as well as shred the chicken. If it isn't ready to shred, let cook for another 2 hours on low. 

5. I let this cook from about 11am-7pm. It was ready before then but on the last hour I turned it up to high and let it do its thing. 

6. Next, wash cilantro, grate cheese, cut avocado, grab the sour cream. 

7. Grab your bowls and dish it out, don't forget your toppings! 

(don't forget to turn your crockpot off so it will cool down so you can save it for tomorrow)
