Broccoli Cheddar Soup- CrockPot

Happy Friday y'all, its cold here in West Texas and I am LOVING it!!! :) It's the perfect temperature for fall, I wish it would stay like this forever... Or until I was ready for summer!! Anyways we are making Broccoli Cheddar Soup in the Crock Pot tonight! This is also Keto Friendly! 


Ingredients:

- 2 Heads of broccoli

- 1 block of cream cheese (8oz)

- 1 cup of whipping cream

- 2 tbsp of butter

- Half of an onion

- 2 cups of water

- 2 cups of chicken broth

- 3 cups of cheddar cheese (we use the block and grate it)

- salt & pepper

- thyme 


Directions: 

1. Grab the crock pot, add in the water, heavy whipping cream and broth. 

2. For the cream cheese and butter, melt these together in a microwave safe bowl then mix into the water and broth mixture. 

3. Wash the 2 broccoli heads and cut up in little pieces. Add them into the crock pot and stir. 

4. Cut up your half onion and throw it in the crock pot- stir. 

5. Cook for 3 hours, then put in 3 cups of cheddar cheese, let all cheese melt. 

6. Serve up and Enjoy!!
