Green chili chicken enchiladas

Green Chili Chicken Enchiladas: 



Ingredients:
2 chicken breasts 
1 can of hatch green chili’s
1 can of hatch green enchilada sauce 
1 onion 
Avocado
Cheese 
Hatch green chili tortillas 

Directions:

  1. Place your chicken breast on the grill. Cook until internal temperature is 165. 
  2. Once chicken is done let cool and then shred! 
  3. In a bowl put in a little cheese, green chilis, onion and then shredded chicken. Mix together. 
  4. In a Pyrex dish pour a little green chili sauce. 
  5. Grab a tortilla and fill with your mixture and roll up and continue with 6-8 enchiladas. 
  6. Pour the rest of your green sauce on top, add shredded cheese. 
  7. Cook in the oven for 30 minutes on 350 degrees. 
  8. Take out, serve and enjoy!
