Green Chili Chicken Enchiladas:
Ingredients:
2 chicken breasts
1 can of hatch green chili’s
1 can of hatch green enchilada sauce
1 onion
Avocado
Cheese
Hatch green chili tortillas
Directions:
- Place your chicken breast on the grill. Cook until internal temperature is 165.
- Once chicken is done let cool and then shred!
- In a bowl put in a little cheese, green chilis, onion and then shredded chicken. Mix together.
- In a Pyrex dish pour a little green chili sauce.
- Grab a tortilla and fill with your mixture and roll up and continue with 6-8 enchiladas.
- Pour the rest of your green sauce on top, add shredded cheese.
- Cook in the oven for 30 minutes on 350 degrees.
- Take out, serve and enjoy!
