Lasagna stuffed spaghetti squash:
Ingredients:
1 spaghetti squash
1 onion
2 tsp chopped garlic
1 tsp Italian seasoning
1 tsp olive oil
Salt & pepper
1 16oz can of tomato sauce
1 8oz can of diced tomatoes
1 package of Italian sausage
Ricotta cheese
Italian blend cheese
Parmesan cheese
Directions:
- Cut spaghetti squash in half lengthwise. Place face up on baking sheet, brush with olive oil and add salt and pepper. Cook for 30 mins on 400.
- In a pot add in olive oil with onion and garlic. Cook for about 3-5 minutes then add Italian sausage. Cook until meat is brown.
- Add tomatoes and tomato sauce into the meat. Add Italian seasoning, salt and pepper. Let simmer.
- Pull spaghetti squash out and then place a layer of ricotta cheese, tomato sauce so on and so on. Add Italian cheese and parmesan on top.
- Place it back in the oven until cheese is completely melted and bubbly.
- Take out , cut in half again if desired and enjoy!
